Sweet and Spicy Peanuts
Description
This recipe involves heating peanut oil with honey, red pepper flakes, and five-spice powder over medium heat, then stirring in peanuts until they become caramelized and coated in a glossy, spiced glaze. The mixture is cooked carefully to prevent burning while ensuring the peanuts absorb the sweet and spicy flavors and achieve a crunchy surface.
The flavor combines honey's sweetness with the heat of red pepper flakes and the warmth of Chinese five-spice powder, offering a complex taste profile. The peanuts remain whole and crunchy, with the glaze providing a sticky, flavorful coating.
Once cooked, the peanuts are spread on foil and sprinkled with kosher salt to balance the flavors. After cooling completely, they can be blotted to remove excess oil and stored for convenient snacking.
The peanuts keep well at room temperature or refrigerated for about a week and can be frozen for up to three months if stored airtight. Thaw before serving for best texture.
Ingredients
- 2 tablespoons peanut oil
- 2 tablespoons honey
- ¾ cup cocktail peanuts
- ¼ teaspoon red pepper flakes
- ½ teaspoon five-spice powder
- ½ teaspoon kosher salt
Instructions
- Cover a baking sheet with aluminum foil. Set it aside for now.
- Heat the oil in a non-stick skillet over medium heat. Add the honey, peanuts, red pepper flakes, and 5-spice powder.
- Cook, stirring constantly, until peanuts are brown and glazed (about 5 minutes). Keep the heat no higher than medium and watch very carefully as the honey and nuts will burn easily.
- Spread the peanuts on a foil-lined baking sheet and sprinkle immediately with salt.
- Allow to cool completely; transfer to a paper-towel lined plate and blot with additional paper towel to remove excess oil.
Notes
- Store cooled peanuts at room temperature or in the fridge for up to one week.
- Freeze in an airtight container for up to three months; thaw at room temperature before eating.
- Watch closely during cooking to avoid burning the honey and nuts as they caramelize.
