Sweet and Spicy Pork
Description
This recipe starts with seasoning thick pork chops and searing them in olive oil to develop a browned crust. The chops are then baked briefly to finish cooking through while remaining juicy. Meanwhile, vegetables and jalapeño are cooked in the same skillet with additional olive oil until softened.
Pineapple chunks along with their juice and chicken stock are added to the skillet, creating a sweet and savory sauce with slight acidity. The pork chops are returned to the pan to absorb the flavors further and reheat before serving. Fresh parsley sprinkled on top adds a mild herbal note and color contrast.
Sweet and Spicy Pork works as a main course that pairs well with rice or other starches to balance the sweet and heat elements. The combination of pork's richness with pineapple sweetness and jalapeño spice produces a complex and satisfying dish.
