Sweet Bacon Wrapped Tater Tots

Sweet Bacon Wrapped Tater Tots combine crispy bacon coated with brown sugar and chili powder wrapped around crisp-tender tater tots. Oven-baked on a wire rack, they develop a caramelized crust with a balance of sweet, smoky, and slightly spicy flavors. Served with a sriracha mayo, this snack offers contrasting textures and a hint of heat.

Description

This recipe starts with thawed tater tots individually wrapped with quarter-length strips of bacon. The bacon is coated with a blend of brown sugar and chili powder, which caramelizes during baking to create a sweet and mildly spicy crust. Baking on a wire rack over foil ensures the bacon crisps evenly on all sides without becoming soggy.

The cooking process involves baking initially at 375 degrees Fahrenheit to cook the bacon through, then increasing to 400 degrees to deepen the crispness and caramelization. The texture contrasts the crunchy exterior with the tender potato inside. A homemade sriracha mayo sauce offers creaminess and spicy balance when served alongside.

Perfect as party appetizers or a flavorful snack, these bacon wrapped tots combine familiar ingredients in a creative way. The recipe can be doubled to use a whole bag of frozen tots and appropriate amounts of toppings for larger gatherings.

Because bacon can burn if left unattended at higher temperatures, monitor closely during the final minutes to prevent overcooking. Serving them right after baking ensures the best crunch and warmth.

Ingredients

Servings
  • 50 tater tots thawed to room temperature
  • 12 ounces Bacon
  • cup brown sugar
  • 2 tablespoons chili powder
  • parsley chopped, for garnish, or chives, fresh

Sriracha Mayo

  • ¼ cup mayonnaise
  • 1 tablespoons sriracha plus ore to taste

Instructions

  1. Preheat your oven to 375 degrees F. Line a baking sheet with aluminum foil and place a wire rack over the foil. (The rack will allow the bacon to crisp up on all sides as it bakes.)
  2. Remove the bacon from its package, keeping it all together. Cut the bacon strips in half and then cut each half again to create quarter-length strips. Set aside.
  3. In a small bowl, mix the brown sugar and chili powder together until well combined.
  4. Wrap each tater tot in a small bacon strip and then roll it in the brown sugar mixture. Place the wrapped tater tots on top of the cooling rack.
  5. Bake for 10 to 15 minutes. Then, increase the oven temperature to 400 degrees F and cook for another 5 minutes. (Check to see if the bacon has crisped up. You may need to leave the tots in for another 5 minutes to reach the desired crispiness. Check frequently so they don't burn.)
  6. Carefully remove the pan from the oven. Repeat with the remaining tater tots as needed. Transfer to a serving platter and sprinkle with parsley or chives, if desired.
  7. In a medium bowl, stir together the mayo and sriracha until combined. Serve along side the warm tots for dipping.

Notes

  • This recipe uses about half of a 32-ounce bag of frozen tater tots; to make a full batch, double the bacon, brown sugar, and chili powder quantities.
  • Nutritional information applies to tater tots only, without the dipping sauce.
  • Monitor carefully during the final high-temperature baking step to avoid burning the bacon while achieving desired crispness.
