Sweet Basil Vinaigrette
Description
This vinaigrette blends fresh basil leaves with rice vinegar, a blend of sugar and honey for sweetness, garlic, Dijon mustard, kosher salt, and black pepper. The combination is pureed to a smooth consistency before gradually incorporating a neutral-flavored oil like sunflower or grapeseed, creating an emulsion that coats greens nicely.
The dressing’s bright green color reflects the fresh basil, and its balance of tangy, sweet, and herbal flavors suits a variety of salads. Adjusting the addition of water can help reach the desired consistency if needed.
The vinaigrette remains stable when stored in an airtight container in the refrigerator for up to a week, making it convenient to prepare ahead. It complements crisp lettuces and fresh vegetables, adding vibrant flavor without overpowering them.
Ingredients
- 2 cups basil fresh leaves, tightly packed (about 1/4 pound
- ¼ cup rice vinegar
- 1 tablespoon sugar
- 2 tablespoons honey
- 1 clove garlic
- 1 teaspoon Dijon mustard
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper freshly ground
- 1-2 tablespoons water See if you need it. If the basil leaves and other ingredients are having a hard time, add a little water at a time until everything starts to combine.
- ¾ cup neutral-flavored oil sunflower, grapeseed, avocado, canola oils all work well
Instructions
- Place basil leaves in a strainer and rinse well with cold water. Drain well.
- Combine all ingredinets except the oil in a food processor or blender. Puree mixture until smooth and bright green.
- With the motor running, slowly add the salad oil to form an emulsion. (See Café Tips above in the post for tricks on how to do this.)
- Store in an airtight jar or container in the refrigerator. Dressing keeps for 5-7 days in the refrigerator.
Notes
- This vinaigrette yields about 1½ cups, enough for several salads.
- Adding water gradually helps adjust consistency if the puree is too thick to blend smoothly with oil.
- Store in a sealed container refrigerated for 5–7 days for best freshness.
