  • ½ cup coconut
  • ½ cup almonds chopped
  • Topping:
  • ½ cup sugar
  • ¼ cup water
  • 1 tablespoon butter
  • 1 teaspoon almond extract

Instructions

  1. Beat eggs, sugar, shortening, and extract together.
  2. Slowly mix in buttermilk and dry ingredients.
  3. Pour into a bread pan coated in cooking spray. Bake for 60 to 70 minutes at 325 degrees until knife comes out clean.
  4. While baking boil sugar and water for a few minutes.
  5. Remove from heat and add butter and extract.
  6. Pour over cooked bread and let set for two hours before removing from pan.

Notes

  • Butter or coconut oil can replace shortening if preferred.
  • Make buttermilk substitute by mixing 1 tablespoon vinegar with milk to 1 cup and letting it sit briefly.
  • Use shredded sweetened coconut flakes for sweeter flavor; natural coconut flakes will work but yield a less sweet bread.
