Description
This recipe mixes beaten eggs, sugar, shortening, and coconut extract before slowly incorporating buttermilk and dry ingredients including flour, baking powder, soda, salt, shredded coconut, and chopped almonds. The batter is poured into a greased pan and baked at 325°F for about 60 to 70 minutes until a knife inserted comes out clean.

- 2 egg

Instructions
- Beat eggs, sugar, shortening, and extract together.
- Slowly mix in buttermilk and dry ingredients.
- Pour into a bread pan coated in cooking spray. Bake for 60 to 70 minutes at 325 degrees until knife comes out clean.
- While baking boil sugar and water for a few minutes.
- Remove from heat and add butter and extract.
- Pour over cooked bread and let set for two hours before removing from pan.
Notes
- Butter or coconut oil can replace shortening if preferred.
- Make buttermilk substitute by mixing 1 tablespoon vinegar with milk to 1 cup and letting it sit briefly.
- Use shredded sweetened coconut flakes for sweeter flavor; natural coconut flakes will work but yield a less sweet bread.
