Before serving, it's shaken vigorously to emulsify and then drizzled over shredded cabbage, which softens slightly as it chills in the fridge. Ingredients

  • 1 c. sugar
  • ½ c. white vinegar
  • 1 c. vegetable oil
  • 1 tsp. celery seed whole
  • ¼ to ⅓ c. sweet white onion to taste, or yellow onion, grated
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground

Instructions

  1. In a medium saucepan over medium-high heat, stir sugar and vinegar until sugar dissolves.
  2. Remove saucepan from heat and add remaining ingredients, stirring to combine. Let cool.
  3. Transfer to a 1-quart jar with a lid, or use a similarly sized container. The dressing will appear layered and separated, which is fine. Refrigerate to cool completely.
  4. To make the coleslaw salad: About 30 minutes prior to meal time, add the shredded cabbage to a large bowl. Give the jar of dressing a vigorous shake to incorporate, until the dressing has a cloudy appearance. Then drizzle dressing over the cabbage. Place the prepared salad in the refrigerator to chill until you’re ready to eat. Then fold the salad a few times to incorporate, before placing it on the table. So easy!

Notes

  • Grate the onion using the large holes of a box grater and adjust the amount according to how strong you want the onion flavor.
  • Make the dressing at least a few hours ahead or up to a couple of days in advance; store in a tightly sealed container in the refrigerator.
  • The dressing separates naturally when refrigerated; shake well before using.
  • The recipe yields enough dressing for about two 16-ounce bags of pre-shredded coleslaw mix.
