Sweet Pepper Poppers
Description
These Sweet Pepper Poppers start by trimming and coring sweet mini peppers, which act as edible vessels for the filling. Ground turkey is cooked and seasoned with taco spices and water, then softened further by melting in cream cheese for body and creaminess. Black beans and corn fold into this mixture, adding texture and mild sweetness. Each pepper is stuffed with a dollop of this filling, baked initially to soften the peppers and cook through the meat mixture, then topped with pepper jack cheese to melt golden and slightly spicy. A cilantro garnish adds fresh herbaceous notes to the finished dish.
The peppers provide a natural sweetness with a slight crunch, complementing the savory, mildly spicy filling. The pepper jack cheese melt enhances flavor with a creamy, peppery finish. This combination makes a colorful and flavorful finger food or appetizer that balances textures and layers of taste.
These poppers can be served warm directly from the oven, suitable for gatherings, snacks, or light meals. They combine protein, vegetables, and dairy in a unified dish that is easy to prepare and share.
