Sweet Pork Enchiladas
Description
The Sweet Pork Enchiladas begin with a sauce made by melting butter and whisking in flour to form a roux, which is then combined with chicken broth to form a smooth base. Red enchilada sauce, seasoned with cumin, onion salt, and a touch of brown sugar, is added to give the sauce a mild, slightly sweet flavor profile that complements the pork filling. The pork is shredded and can be prepared using a recommended Sweet Pork recipe or Instant Pot Pork Carnitas.
Flour tortillas are filled with shredded pork, cheese, and chopped cilantro, then rolled and placed seam-side down in a baking dish. The sauce is poured over, followed by additional cheese on top. Baking until the cheese is melted and lightly browned produces a warm, rich casserole with layers of tender pork, creamy sauce, and melted cheese. This dish serves well hot from the oven accompanied by extra cilantro or additional sauce as desired.
