Sweet Potato Apple Turkey Bake
Description
This bake starts with a simmered stock mixture containing chicken stock, diced onions, oats, and grains, infused with fresh thyme, sage, salt, and pepper. In a prepared loaf pan, slices of sweet potato, apple, and cooked turkey are arranged in layers and covered evenly with the oat-infused stock. The topping combines oats, grains, flour, grated Parmesan cheese, melted butter, and parsley, spread over the casserole.
Baking covered first, then uncovered, for 40-45 minutes develops tender vegetables and fruits while crisping the topping to a golden brown. The finishing result balances the sweetness of apple and sweet potato with savory turkey and herbs. It can be sliced and served warm as a wholesome meal component.
Ingredients
- 2 cups chicken stock low sodium
- ¼ cup porridge oats Rogers brand
- ¼ cup healthy grains Rogers brand
- 1 onion diced
- 1 sweet potato peeled & cut into ½" slices, medium
- 2 apple unpeeled, cored, and sliced into ½" slices
- 1 lb turkey cooked, sliced
- 2 tablespoon thyme fresh leaves
- 1 tbsp sage chopped, fresh leaves
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Topping
- ½ cup porridge oats Rogers brand
- ½ cup healthy grains Rogers brand
- 3 tablespoon all-purpose flour unbleached, Rogers brand
- ¼ cup Parmesan Cheese Grated
- 3 tablespoon butter melted
- 1 tablespoon parsley chopped
Instructions
- Preheat oven to 350°
- Lightly coat a 9" x 5" loaf pan with cooking spray
- In a saucepan over medium-high heat bring chicken stock, onions, and oats to a boil. Reduce heat and allow it to simmer 5 minutes.
- Remove stock mixture from heat and stir in thyme, sage, salt, & pepper
- Layer sweet potato slices, then apple slices, then turkey slices, in prepared pan.
- Pour chicken stock, oat mixture evenly over layered sweet potato, apples, and turkey
- In a small bowl, stir together topping ingredients
- Spread topping evenly over top of the casserole
- Bake, covered with foil, 30 minutes. Remove foil and bake a further 10-15 minutes, until sweet potatoes and apples are fork tender and topping is golden.
- Remove from oven and allow to stand 5 minutes before cutting into slices and serving.
