Sweet Potato Black Bean Soup

• 1 tablespoon olive oil
• 1 large red onion minced
• 1 Sweet Bell Pepper minced
• 1 pinch salt
• 2 tablespoons cilantro minced
• 3 cloves garlic minced
• 2 large sweet potatoes peeled and cut into 1/2 inch dice
• 1/2 teaspoon cumin
• 1 teaspoon oregano
• 1 pinch chili powder (optional)
• 2 cans black beans drained and rinsed
• 1/4 teaspoon salt (more or less to taste)
• 1/2 cup oats (any size any type)
• 5 cups vegetable stock low sodium
• 1/4 cup cilantro minced
