Sweet Potato Breakfast Casserole
Description
This casserole starts with shredded sweet potatoes and chopped green onions combined with olive oil, salt, and black pepper. The mixture is pressed into casserole dishes and baked at 350°F until just beginning to brown, developing some caramelization on the edges. After this initial bake, whole eggs are cracked over the sweet potatoes, and Parmesan cheese is sprinkled on top.
The dish returns to the oven for a short time to cook the eggs to the desired doneness—soft yolks if baked briefly or fully set with longer baking. This layering technique balances the natural sweetness and softness of baked sweet potatoes with the richness of eggs and a cheesy finish. The recipe is simple, focusing on these few ingredients to produce a hearty breakfast or brunch item.
Ingredients
- 3 lbs sweet potato
- 2 Tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 green onions
- 8 egg
- 1/4 cup Parmesan Cheese
Instructions
- Preheat the oven to 350.
- Shred the sweet potatoes and chop the green onions. Mix them together and add the oil, salt and pepper. Press into individual casserole dishes or larger dishes.
- Bake for 45 minutes until the sweet potatoes start to brown.
- Break eggs over the sweet potatoes, and sprinkle parmesan cheese on top. Return to the oven for 5 more minutes, or slightly longer if you don't want the yolks to be runny.
