  • 1 cup mashed sweet potatoes
  • 1 cup creamy almond butter
  • ¼ cup cocoa powder
  • ¼ cup pure maple syrup
  • ½ cup dark chocolate chips

Instructions

  1. First, preheat the oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch square pan with parchment paper.
  2. In a large mixing bowl, add the mashed sweet potatoes, almond butter, cocoa powder, and maple syrup. Stir to combine.
  3. Then, fold in the chocolate chips.
  4. Transfer the brownie batter to the prepared pan. Smooth out into an even layer.
  5. Bake for 18 to 21 minutes, or until a toothpick inserted comes out with only moist crumbs.
  6. Finally, remove the pan from the oven. Allow the sweet potato brownies to cool before slicing and serving.

  • Cook the mashed potatoes before making this recipe.  You can roast them in the oven, microwave them, or boil the potatoes.  Then, mash with a fork or potato masher.
  • If you boil the potatoes, be sure to squeeze out any excess water.
  • If desired, replace the almond butter with creamy all-natural peanut butter.
  • Fully cool before slicing.
  • Store in an airtight container at room temperature for up to 4 days.
  • Store in the fridge for up to 7 days or in the freezer for up to 2 months.
