Sweet Potato Chicken Poppers

These Sweet Potato Chicken Poppers are a great AIP appetizer or sneaky way to get your kids to eat vegetables. Either way, they are delicious. This recipe fits the whole30, paleo and aip diets.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 cups sweet potato I prefer yam as they aren’t quite as sweet, about 1 medium yam, peeled and chopped, or yams
  • 1 pound ground chicken
  • 3 tablespoons tapioca flour
  • 2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees. Rub the olive oil over a large baking sheet and then set aside.
  2. Add the sweet potatoes to a high-speed blender or food processor then blend until about the size of rice.
  3. Add the sweet potatoes along with the chicken, tapioca flour, garlic powder, onion powder and salt to a large mixing bowl.
  4. Using your hands or a spoon, mix until completely combined. To form the poppers, roll them into a ball then flatten until they are about 1 inch thick and in the shape of an egg. They should look like chicken nuggets. Place the finished poppers on the baking sheet.
  5. Place the entire baking sheet into the oven for 40 minutes, flipping halfway. Once finished, remove the oven and serve immediately.

Notes

  •  
  • You’ll need a large baking sheet for this recipe. 
  • You can use sweet potato for this recipe but I prefer yam. It’s less sweet and has less moisture.
  • I used this tapioca starch for the recipe. 
  • I used the Simply Organics garlic and onion powder. It’s high quality and the only brand I use.
