Sweet Potato Coffee Cake

This Sweet Potato Coffee Cake blends moist sweet potato pulp with self-rising flour, sugar, and pumpkin pie spice for a spiced, tender cake base. A crumbly topping made of brown sugar, oats, and more spice creates a textured layer that contrasts with the soft cake. The result is a warmly spiced treat suitable for breakfast or snacks.

Description

The Sweet Potato Coffee Cake uses sweet potato pulp combined with self-rising flour, granulated sugar, and pumpkin pie spice to create a moist and flavorful batter. The addition of milk, melted butter, eggs, and vanilla rounds out the richness and sweetness. A streusel topping made from brown sugar, flour, oats, and pumpkin pie spice is cut together with softened butter, offering a crisp contrast to the tender cake beneath.

Baking the cake layered with batter and crumb topping in a 9x13 inch pan results in alternating layers of soft cake and crumbly topping with a spiced aroma. The texture combines a moist crumb from the sweet potato with crisp and chewy oat topping. It offers a warm, cozy flavor profile with pumpkin spice notes.

The recipe allows for sugar substitutions such as stevia or erythritol, and brown sugar can be swapped with Monk Fruit Golden for those seeking alternatives. Baking until a toothpick inserted comes out clean ensures proper doneness.
