Sweet Potato Enchiladas
Description
Sweet Potato Enchiladas are prepared by roasting poblano peppers and combining them with sweet potatoes to create a mildly smoky and sweet filling. This mixture is slightly mashed to bind the textures before being wrapped in flour tortillas with a sprinkle of cheddar cheese. The enchiladas are arranged seam-side down in a baking dish, covered with enchilada sauce and remaining cheese, then baked until the cheese melts and the flavors meld together. The technique results in warm, soft tortillas with a creamy, flavorful interior enriched by the roasted poblanos and melted cheddar.
The enchiladas can be served as a main dish, suitable for a vegetarian meal or a comforting dinner. Ingredients
- 2 cups poblano pepper $1.52, roasted
- 2 cups sweet potato
- 2 cups salad greens
- 4 flour tortillas $0.32, fajita size
- 10 oz can enchilada sauce $1.00
- 1 cup cheddar cheese $0.99, shredded
Instructions
- Preheat your oven to 350 degrees. Spray a baking dish lightly with non-stick spray. Using a fork, slightly mash the Roasted Poblano and Sweet Potato Salad.
- Lay out your tortillas and divide the mashed up sweet potato mixture evenly between all four (about 1/2 cup each). Sprinkle a little bit (about 2 Tbsp) of shredded cheddar in each tortilla as well. Gently fold the sides of the tortillas in toward the center, one side over the other, until they look like fat cigars.
- Pour a little bit of enchilada sauce in the bottom of your baking dish. Place the rolled enchiladas in the baking dish, seam side down. Top the enchiladas with the rest of the sauce and the rest of the shredded cheese.
- Bake the enchiladas at 350 degrees for about 30 minutes. Enjoy!
