Sweet Potato Gratin with Italian Sausage and Spinach

This recipe is sweet, savory and jam packed with flavor and nutrition. It makes a wonderful side dish or an excellent meal in itself. In this simple recipe, sweet potatoes, gruyere cheese, Italian sausage, and spinach are topped with a garlicky cream sauce to create a delicious twist on the classic potato au gratin casserole.

Ingredients
- 2 tablespoons olive oil
- 1 pound Italian sausage sweet
- 8 ounces spinach fresh
- 2 cups heavy cream
- 4 tablespoons butter
- 2 garlic minced, cloves
- 1 tablespoon thyme or more to taste, fresh leaves
- 2 pounds sweet potato peeled and thinly sliced with a mandoline
- 1½ cups gruyere cheese shredded
- 2 teaspoons Italian seasoning plus more to garnish
- salt to taste, sea salt
- black pepper to taste, sea salt
Instructions
- Preheat the oven to 400 degrees F. Grease a baking dish with cooking spray.
- In a large skillet, heat olive oil over medium-high heat; brown Italian sausage, breaking it into pieces as it cooks, about 8 minutes. Add in spinach and season with salt and pepper.
- Combine cream, butter, and garlic in a saucepan. Bring to a simmer; remove from heat and mix in thyme, salt, and pepper.
- Arrange ½ of the sweet potato slices in the prepared baking dish; cover with ½ of the Gruyere cheese and the sausage and spinach mixture. Pour ½ of the cream mixture on top.
- Arrange remaining sweet potato slices on top and pour over the remaining cream mixture. Top with the remaining cheese and sprinkle with Italian seasoning, salt and pepper.
- Bake in the preheated oven until golden brown and bubbly, about 30 minutes. Set the oven to broil for 2 minutes.
