Sweet Potato Hash

Sweet Potato Hash is a delicious savory breakfast that will leave you feeling full and satisfied. Everything is made in one pan making the cooking and cleaning easy. Breakfast for dinner never sounded so good!

Ingredients

  • 4 lices Bacon ½-inch pieces, diced
  • 1 cup onion diced
  • 1 red bell pepper diced
  • 4 cups sweet potatoes diced
  • ¾ teaspoon chili powder
  • ½ teaspoon paprika
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • salt
  • black pepper
  • 2 cups spinach fresh
  • 4 egg large
  • 1 green onion chopped

Instructions

  1. Cook the 4 slices diced bacon, in a large skillet over medium heat until crispy. Remove with a slotted spoon onto a paper towel-lined plate.
  2. Cook the 1 cup diced onion and 1 diced red bell pepper in the bacon grease for 2 minutes, then add the 4 cups diced sweet potatoes. Toss the potatoes to coat them in the grease.
  3. Add in the ¾ teaspoon chili powder, ½ teaspoon paprika, ¼ teaspoon cumin, ¼ teaspoon garlic powder, and salt & pepper. Cook for 10-12 minutes, just until tender.
  4. Stir in the cooked bacon and 2 cups fresh spinach and cook for 1-2 minutes until wilted.
  5. Make 4 wells in the pan and then crack 4 large eggs into them. Cover the skillet and cook 2-5 minutes (depending on how you prefer your eggs).
  6. Sprinkle with 1 chopped green onion, and season with salt and pepper to taste.
