Sweet Potato Hash

Ingredients

Roasted Sweet Potatoes

  • 2 tablespoons olive oil
  • 3-4 large sweet potato washed, peeled, and cut into ½-inch cubes (approximately 6 cups
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Hash

  • 6 lices Bacon cut into half-inch pieces
  • 1 yellow onion diced
  • 2 teaspoons garlic minced
  • 5 large egg room temperature
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • parsley for garnish, fresh

Instructions

Sweet Potatoes

  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss all the ingredients together until the potatoes are coated.
  3. Evenly spread out the coated potatoes on the lined baking sheet.
  4. Bake for 30 minutes, flipping the potatoes halfway through. The potatoes should be fork- tender.

Hash

  1. While the potatoes are roasting, heat a large, oven-safe skillet over medium heat. Once hot, add the chopped bacon and cook until crispy. Remove the bacon from the pan and set on a paper towel to drain. From the skillet, drain all but 2 tablespoons of bacon grease.
  2. In the same skillet, add the onions to the bacon grease and cook over medium heat until soft (6-8 minutes).
  3. Add garlic and cook for 1 more minute. Remove from heat.
  4. Once sweet potatoes have finished cooking, remove from oven and add them to the skillet.
  5. Add the cooked bacon back into the skillet. Toss to coat.
  6. Make 5 wells and crack and egg in each well.
  7. Top with salt and pepper.
  8. Transfer the skillet to the oven and bake for 10-15 more minutes or until eggs are cooked through to your desired consistency. Serve immediately with parsley for garnish (optional).
