- 1.5 pounds sweet potato leaves (Yam leaves)
- 4 cloves garlic
- 1 tablespoon vegetable oil
- ⅛ teaspoon salt
- ½ cup water

Instructions
- Put 1.5 pounds of yam leaves into a big pot. Pour 12 cups of water to soak it for 15 minutes. Then, wash and rinse it 3 times. Then, drain and set it aside.
- Peel and cut 4 cloves of garlic into slices.
- Pour 1 tablespoon of vegetable oil into the pot or wok. Turn on the fire to medium small, add the sliced garlic from step 2. Stir fry them a little bit or until it’s slightly golden brown.
- Next, put the washed yam leaves from step 1 into the pot or wok. Pour ½ cup of water and ⅛ teaspoon of salt. Then, cover the lid and let it cook for 2 minutes.
- After that, open the lid, flip the vegetables and stir fry it for 1-2 minutes or until it’s soft.
Notes
- The best is to use fresh sweet potato leaves that are not wilted or discolored for the best flavor and texture.
- Cut or remove the hard and tough stems.
- Preheat the wok, pot or pan, then add the oil and garlic. Stir fry the garlic for a minute or two until fragrant comes out. This helps to infuse the oil with garlic flavor and adds depth to the dish.
- Add salt, water and cover for the lid, let the sweet potato leaves cook for 2 minutes. Then, stir and flip them. Keep stir frying for 1-2 minutes until it is soft.
