Sweet Potato Noodle Stir Fry with Steak

This stir fry uses sweet potato noodles, tender sliced beef steak, and crisp sugar snap peas cooked quickly in sesame oil with a savory sauce of hoisin, tamari, garlic, and ginger. The dish offers a balance of sweet, savory, and aromatic flavors and features a pleasant contrast between soft noodles, tender meat, and crunchy vegetables. Freezing the steak briefly before slicing helps achieve thin, even pieces.

Description

Sweet Potato Noodle Stir Fry with Steak combines thinly sliced beef sirloin or flank steak with sweet potato-based noodles, delivering a hearty texture variation. The steak is frozen slightly before slicing for manageable thin cuts. A sauce made from hoisin, tamari or soy sauce, garlic, and ground ginger imparts depth and aromatic warmth. Sesame oil is used for stir frying, contributing a nutty note and enhancing the dish's mouthfeel.

The vegetables, including sliced onion and sugar snap peas, add crispness and freshness that balance the noodles and rich meat. The quick cooking technique over medium-high heat retains the vegetables' texture and cooks the steak to tender doneness without drying. Tossing everything with the sauce just before serving ensures even flavor coating.

This meal suits a weeknight dinner or lunch, offering a flavorful, satisfying dish that brings in alternative noodles with vibrant vegetables. Garnishing with scallions adds a mild bite and color contrast.

Ingredients

Servings
  • 2 cups sweet potato noodles
  • 1 onion small, sliced
  • 1 cup sugar snap peas
  • 1 pound beef sirloin or flank or skirt steak, sliced thin
  • 2 tablespoon sesame oil
  • 2 tablespoon hoisin sauce gluten free if necessary
  • ¼ cup tamari or soy sauce if not gluten free
  • 3 tablespoon garlic chopped
  • 1 tablespoon ground ginger

Instructions

  1. Freeze sirloin for 30 minutes before slicing.  This will make it easier to cut.
  2. Whisk hoisin sauce, tamari, garlic and ginger in a small bowl. Set aside.
  3. Heat a non-stick skillet over medium-high heat and add 1 tablespoon of sesame oil.
  4. Cook steak for a minute or two.  Add a bit of the stir fry sauce and toss to coat. Remove steak from pan and set aside.
  5. Heat another tablespoon of sesame oil in same pan. Add all vegetables and cook for about 5 minutes, stirring frequently.
  6. Add steak back to pan and all of stir fry sauce.  Toss gently to coat and cook for another minute.
  7. Serve immediately with scallions for garnish.
