Ingredients

  • 2 pounds sweet potato peeled and cubed
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • 2 green onions sliced
  • 2 ribs celery chopped
  • 1 cup corn kernels thawed, frozen
  • ½ cup red bell pepper diced
  • 6 lices Bacon cooked and crumbled

Dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons sweet relish
  • 2 tablespoons apple cider vinegar
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Toss sweet potatoes with olive oil, garlic powder and salt & pepper to taste. Roast 35-40 minutes or until fok tender. Cool completely.
  3. Combine dressing ingredients in a large bowl and mix well.
  4. Add remaining ingredients, toss to coat and refrigerate at least 2 hours before serving.

Notes

  • Roasting sweet potatoes enhances their flavor, but baking or boiling can be used as alternatives.
  • The salad can be tossed with a mustard-based vinaigrette for a different dressing option.
