Sweet Potato Salad
Description
The salad starts with roasting sweet potatoes seasoned with olive oil, garlic powder, salt, and pepper until tender. Meanwhile, a dressing is made by mixing mayonnaise, sour cream, Dijon mustard, sweet relish, and apple cider vinegar, which delivers a balance of tangy, sweet, and creamy flavors.
Once the sweet potatoes have cooled, they are combined with sliced green onions, chopped celery, corn kernels, diced red bell pepper, and crumbled cooked bacon. Tossing everything in the dressing coats the ingredients, bringing out their individual flavors while ensuring the salad tastes harmonious.
This salad is ideal served chilled as a side dish with grilled meats or as a potluck contribution. The roasted sweet potatoes provide a mellow sweetness contrasted by smoky bacon and crisp vegetables. It can be prepared ahead, allowing the flavors to meld in the refrigerator.
Notes suggest roasted sweet potatoes yield the best flavor, but baked or boiled can be substitutes. The salad also works well with a mustard vinaigrette if preferred.
