Sweet Potato Sausage Frittata
Description
This frittata begins by browning sausage in a skillet, then cooking chopped onions, bell peppers, and diced sweet potatoes until softened. The combination brings savory, sweet, and aromatic elements into the dish. Beaten eggs seasoned with salt, black pepper, and oregano are mixed into the cooked ingredients. The mixture is cooked briefly on the stovetop, then transferred to the oven to bake until the eggs are set but not dry, resulting in a moist, sliceable frittata.
The dish can be served warm or at room temperature, suitable for breakfast, brunch, or a light dinner. Adding fresh parsley and sliced avocado offers contrasting fresh herbal notes and creamy texture that complement the richness of sausage and eggs.
Oven temperature and baking time are important to avoid overcooking; watch for just-set eggs. Sweet potatoes should be tender but intact to provide pleasant texture. Using a cast iron skillet allows even cooking and browning.
