Sweet Potato Shepherd's Pie
Description
Sweet Potato Shepherd's Pie uses peeled, boiled sweet potatoes mashed with Italian seasoning, salt, and pepper as a flavorful topping. The filling starts by sautéing yellow onion and garlic, then cooking lean ground turkey until browned. Tomato paste, oregano, smoked paprika, and broth create a rich base, simmered to reduce and thicken. Peas or similar vegetables are folded into the filling to add texture and color. This savory meat mixture is spread into a baking dish, then topped evenly with the mashed sweet potatoes.
Baked at 375°F, the pie cooks until the sweet potato topping lightly browns, adding texture and a subtle sweetness that complements the smoked and herby filling. It's a balanced one-dish meal combining protein, vegetables, and starches with both mild and smoky flavors.
Leftovers can be refrigerated for up to 5 days and reheated in the microwave, with the option to freeze for longer storage. White potatoes may substitute sweet potatoes, and variations with ground beef or chicken are possible. Any broth type can be used depending on preference.
Ingredients
- 1.5 lbs sweet potato peeled and chopped
- ½ Tsp Italian seasoning blend
- sea salt to taste
- black pepper to taste
The Filling:
- 1 Tbsp olive oil
- 1 Medium yellow onion diced
- 1½ lbs turkey meat lean
- 2 Tbsp tomato paste
- 3-4 garlic minced, cloves
- ½ Tsp oregano dried
- 1 Tbsp smoked paprika
- 1 Cup chicken broth or beef broth
- 1 Cup peas or any other veggies like corn, carrots, defrosted, frozen
Instructions
- Preheat the oven to 375°F
- Place the sweet potatoes in a large saucepan with just enough water to cover. Bring to a boil and cook until the potatoes are tender. About 10 minutes.
- Drain and mash, then season with salt, pepper, and Italian seasoning blend.
- Heat oil in a large nonstick pan over medium-high heat. Sauté the onions for 3-4 minutes, then stir in the garlic and cook for a minute or so.
- Add the ground meat and cook, crumbling with a wooden spoon, until the meat is cooked through.
- Stir in the tomato paste, oregano, paprika, salt and pepper, and broth. Simmer for a few minutes until the liquid is reduced, then stir in the peas.
- Spread the meat mixture into a 2-quart baking dish. Add mashed potatoes on top and spread it evenly all the way to the sides.
- Bake until the potatoes are just starting to brown, about 25-30 minutes. Rest, then serve and enjoy!
Notes
- Store leftovers in the fridge for up to 5 days and reheat in the microwave when ready to eat.
- You can freeze the dish for up to 3 months for later use.
- White potatoes can be substituted for sweet potatoes if preferred.
- Lean ground beef or chicken can replace the ground turkey without affecting the cooking method.
- Any type of broth (chicken or beef) works well in the filling.
