Description
Sweet Potato Tacos are made by roasting sweet potato cubes seasoned with taco seasoning, salt, pepper, and garlic powder. After 15 minutes, corn kernels and diced red bell pepper are added, tossed with olive oil and seasoning, then roasted until all the vegetables are tender and lightly browned.
The vegetables are then mixed with fresh lime juice and chopped cilantro to add brightness. Warm tortillas serve as the base to hold the roasted vegetable filling, which is completed with toppings of your choice.

Ingredients
- 1 ½ pounds sweet potato peeled & cut into ½ " cubes
- 2 tablespoons olive oil divided
- 1 tablespoon taco seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 cup corn kernels frozen, thawed
- ½ red bell pepper diced
- 8 small flour tortillas or corn tortillas
- 1 lime juiced
- 2 tablespoons cilantro chopped, fresh
- toppings as desired
Instructions
- Preheat oven to 450°F. Line a baking pan with parchment paper.
- Combine taco seasoning, salt, pepper, and garlic powder in a small bowl.
- Toss sweet potatoes with 1 tablespoon olive oil and half of seasoning mix.
- Spread sweet potatoes on the pan and roast 15 minutes.
- Meanwhile, toss corn and peppers with remaining olive oil and seasoning mix. Add the vegetables to the pan with sweet potatoes and stir. Roast an additional 12-14 minutes or until tender and lightly browned.
- While vegetables are roasting, heat tortillas according to package directions.
- Remove potato mixture from the oven and toss with lime juice and cilantro.
- Serve in heated tortillas with toppings as desired.
