Sweet Potato Toast
Description
Sweet Potato Toast uses thin, skin-on slices of a large, wide sweet potato toasted until they become tender but still retain their shape. The slices are sprayed lightly with cooking spray and salted before toasting to enhance flavor and texture. The recipe offers two methods: direct toaster toasting for convenience and an oven method to achieve a gentler, slower cook. This ensures the slices are fork tender but not overly soft, so they can support various toppings.
The toasts can be topped with cream cheese mixed with blueberries and chia seeds, ricotta with raspberries and coconut, or savory options like mashed avocado with lime or a fried egg garnished with parsley. These toppings add varied textures and flavors on a sweet, firm base.
Leftover slices can be stored without toppings in an airtight container refrigerated for up to 3-4 days and reheated briefly in a toaster or toaster oven. Kitchen notes emphasize not overcooking to maintain the necessary firmness and suggest using leftover sweet potato halves in other recipes like roasted breakfast sweet potato hash.
Ingredients
- 1 large wide sweet potato
- cooking spray
- salt to taste
Topping Ideas
- cream cheese with blueberries and chia seeds
- ricotta cheese with raspberries and coconut
- peanut butter with banana slices and cinnamon
- cottage cheese with tomatoes and everything seasoning
- egg with fresh chopped parsley, salt and black pepper, fried
- avocado mashed with lime juice, salt and pepper
Instructions
- Using a large sharp knife, cut off the bottom stem and place the sweet potato on a cutting board cut side down. Keep the skin on.
- With a steady hand, make about 6 thin slices about 1/4"-1/3" thick from the one end of the sweet potato to the other.
- Spray sweet potato slices with cooking spray and season with salt.
Toaster Instructions
- Insert slices into toaster (similar to bread) and toast the slices on high. Alternatively, you can toast them in a toaster oven.
- After the sweet potatoes pop up from the toaster, check to see if they are fork tender, and toast longer if desired. Depending on your toaster, you may also want to turn down the toaster setting to Medium.
- Remove the sweet potatoes from the toaster, and cool on a wire rack before adding toppings.
Oven Instructions
- Preheat oven to 350℉. Place a wire rack on a large rimmed baking sheet.
- Bake for 15-20 minutes, until potatoes are fork tender, but not fully cooked or soft.
- Remove the sweet potatoes from the oven, and cool on a wire rack before adding toppings.
Notes
- Store any leftover toasted sweet potato slices without toppings in an airtight container in the refrigerator for up to 3-4 days to avoid sogginess.
- Reheat slices in a toaster or toaster oven for about one minute to restore texture before serving.
- Avoid overcooking the slices; aim for fork tender but still firm enough to hold toppings without breaking.
- Use leftover sweet potato halves by roasting or dicing them for other dishes like sweet potato hash.
