Description
This snack mix starts by boiling together butter, brown sugar, and corn syrup to form a sweet caramel sauce. Baking soda and vanilla are added off the heat to create a lighter, aerated topping once mixed. Rice Chex cereal and cashews are placed inside a paper bag, coated with the caramel sauce, then microwaved in intervals to set the caramel and crisp the mix. Shaking the bag between intervals evenly distributes the coating.
Once cooled on wax paper, colorful M&Ms are sprinkled on top, providing a salty-sweet combination with chocolate pieces. The final result is a crunchy, sweet snack mix with crunchy nuts and chocolate accents.

Ingredients
- 1 c. butter
- 1 1/2 c. brown sugar
- 1/2 c. light corn syrup
- 1 rice chex cereal 14 oz box
- 1 tsp baking soda
- 1 tsp vanilla
- 1 cashews 8 oz can
- 1 c. M&Ms
Instructions
- In a small saucepan bring butter, brown sugar and corn syrup to a boil. Remove from heat and stir in baking soda and vanilla.
- In a brown paper bag combine cereal and cashews. Pour caramel mixture over cereal in bag. Fold top of bag over and shake. Place in microwave and microwave 2 minutes, remove and shake again. Repeat two more times.
- Pour onto wax paper and sprinkle M&Ms on top of snack mix. Cool.
