Sweet Tea

Sweet Tea is prepared by boiling water with sugar and a pinch of baking soda, then steeping black tea bags to infuse strong flavors. After steeping, the tea is combined with lemon juice if desired and diluted with cold water before serving over ice. This yields a smooth, sweetened strong iced tea popular in southern-style refreshment.

Description

This Sweet Tea begins by dissolving sugar and baking soda in hot water, which smooths the flavor and enhances the tea's robust taste. Black tea bags steep in this concentrate to extract a rich, dark brew. The tea bags are removed without squeezing to avoid bitterness. Lemon juice can be added for a fresh, tart dimension.

The brewed tea is diluted with cold water to balance strength and sweetness, then chilled or served directly over ice for a refreshing cold beverage. The presence of baking soda mellows strong tannins in the tea and contributes to a smoother mouthfeel.

Sweet Tea is commonly stored in the refrigerator for several days but is best when freshly made. It is a traditional complement to meals or a thirst-quenching drink on warm days.

Ingredients

Servings
  • 8 cups water divided
  • 6 black tea bags
  • 1 cup granulated sugar
  • teaspoon baking soda
  • ¼ cup lemon juice optional (fresh-squeezed preferred)

Instructions

  1. Combine 3 cups of water (310ml), sugar, and baking soda in a medium-sized saucepan over medium-high heat.
  2. Bring to a boil, stirring occasionally, then immediately remove from heat.
  3. Add tea bags and steep for 10 minutes. Lift tea bags from the tea and allow them to drip (don’t squeeze), then discard.
  4. Pour tea into a large pitcher.
  5. Add lemon juice, if using, then add remaining 5 cups (1.2L) cold water and stir well.
  6. Tea may be served immediately poured over ice, or store in the refrigerator for several hours before serving. Always stir before pouring.

Notes

  • Including baking soda adds smoothness and reduces tea bitterness; a small pinch is sufficient.
  • Store sweet tea in a covered pitcher in the refrigerator for 3 to 4 days.
  • Serve cold over ice for traditional refreshing taste and texture.
