Sweetcorn Salsa
Description
In this Sweetcorn Salsa, canned sweetcorn is mixed with diced red bell pepper, tomatoes, and red onion, providing a variety of textures from crispy to juicy. Fresh cilantro and jalapeños add aromatic herbal notes and moderate heat, while lime juice, olive oil, and apple cider vinegar create a tangy, bright dressing. Crushed garlic enhances depth, and crumbled feta cheese added at the end lends a creamy, salty contrast to the fresh vegetables.
The preparation involves simple chopping and stirring, making it accessible for a fresh side or topping. Adjusting the jalapeño amount tailors the heat level, and cilantro can be swapped for parsley if preferred. Optional mix-ins such as pineapple add sweetness, and integrating grilled chicken creates a more substantial dish. This salsa also works well as a taco filler or accompaniment.
The recipe notes suggest substituting herbs, omitting spicy ingredients, and adding sweetness with pineapple. It advises including feta just before serving to keep its texture fresh and recommends mixing grilled chicken into the salsa to create a complete meal option.

Notes
