Sweetened Milk Caramel Recipe

Sweetened Milk Caramel is a smooth, golden caramel sauce made by baking sweetened condensed milk in a water bath until it thickens and caramelizes. The process transforms the milk's sugars into a rich, sweet flavor and amber color, ideal for drizzling or using in desserts. This slow oven method produces a creamy caramel with minimal effort.

Description

The Sweetened Milk Caramel Recipe relies on a single main ingredient—sweetened condensed milk—slowly baked in a water bath to achieve caramelization. The condensed milk is poured into a shallow dish, covered tightly with foil, and placed inside a larger pan filled with water that reaches halfway up the sides of the smaller dish. The baking time of 60 to 90 minutes at 425°F induces a Maillard reaction, turning the milk from pale and thick to golden brown and creamy through gentle heat and moisture control.

The resulting caramel has a rich, sweet flavor and smooth texture suitable for topping desserts like ice cream or cakes, spreading on toast, or integrating into recipes that call for dulce de leche. After baking, any thin crust formed on top can be removed or blended back into the caramel for uniform consistency. The caramel should be cooled completely to thicken, then stored refrigerated in airtight containers for up to one month.

This slow baking method allows the sweetness and color to develop without burning, providing an accessible way to produce homemade caramel from just one ingredient, avoiding stovetop monitoring.

Ingredients

Servings
  • 14 ounces sweetened condensed milk , 1 can is approximately 1.75 cups

Instructions

  1. Preheat oven to 425°F.
  2. Pour one can of sweetened condensed milk into a shallow casserole dish or pie plate.
  3. Cover tightly with aluminum foil.
  4. Place in a larger pan and create a water bath up 50-75% of the dish with the sweetened condensed milk. It really depends on the size of your pans as to how much it can handle. Don't overfill, but don't let it get dry either.
  5. Bake 60-90 minutes or until condensed milk has reached a golden brown color. Check it periodically and also replace water as needed.
  6. Remove thin crust from the top or use an immersion blender to melt it back in.
  7. Cool completely and transfer to an airtight container or glass jar.
  8. Cover and refrigerate for up to 1 month.
