T-Bone Steak for Two

This T-Bone Steak recipe delivers a richly seared, buttery steak for two. The pan-seared steak is seasoned simply with salt and pepper, cooked with fresh thyme and whole garlic cloves, and finished with rosemary and garlic-infused butter. The result is a juicy steak with a crisp seared crust and herbaceous flavors.

Description

The method involves bringing the steak to room temperature, then seasoning it heavily with kosher salt and freshly cracked black pepper. It is seared in a hot cast iron skillet with olive oil and butter, along with fresh thyme sprigs and whole garlic cloves to infuse aroma. The steak is cooked for 4-5 minutes per side, with frequent basting from the melted butter for a flavorful crust. The sides of the steak are also seared to ensure even cooking.

After resting, the pan is reheated to brown thinly sliced garlic with fresh rosemary in butter, which is then poured over the steak before serving. Parsley sprinkled on top adds a fresh element. This preparation highlights the rich flavor and texture of the T-bone cut while adding fragrant herbal butter richness.

The dish suits an elegant two-person meal and pairs well with simple sides like roasted vegetables or a fresh salad. Leftover steak can be repurposed with eggs for breakfast the next day.

Ingredients

Servings
  • 2 tablespoons olive oil
  • ¼ cup butter plus 2 tablespoons
  • 2 pound T-Bone steak about 1-1 ½ in thick
  • salt kosher salt and freshly cracked
  • black pepper kosher salt and freshly cracked
  • 4 prigs thyme fresh
  • 8 whole garlic cloves 4 left whole and unpeeled, 4 thinly sliced
  • 2 tablespoons rosemary fresh
  • ¼ cup parsley leaves

Instructions

  1. Remove the steak from the fridge and pat it dry with paper towels, sprinkle heavily with salt and pepper on all sides and let sit at room temperature for about 15 minutes.
  2. Heat ¼ cup of butter and the oil in a large cast iron skillet over high heat, when melted and foamy add the steak, thyme and whole garlic cloves. Cook 4-5 min per side, moving the steak around every minute and spooning melted butter over the steak. Don’t forget to sear the sides. If you like a steak more than medium rare cook an additional 1-2 min.
  3. Remove steak from the pan and let rest 5 min.
  4. Return pan to high heat, add in 2 tablespoons butter, when it’s melted add in rosemary and thinly sliced garlic and quickly fry until the garlic just begins to brown.
  5. Pour directly over the steak and serve topped with parsley.

Notes

  • Allow the steak to rest for several minutes after cooking to redistribute juices and preserve tenderness.
  • Leftover steak can be chopped and cooked with eggs for a flavorful breakfast scramble.
