Description

Taco Bake starts with browning lean ground beef with onion, then simmering it with green bell pepper, corn, water, and taco seasoning to infuse flavor. The beef mixture is combined with salsa, layering half of it with half of the refried beans mixed with sour cream and crushed tortilla chips in a greased dish. After layering cheese on top, the process is repeated, creating stacked layers of meat, beans, chips, and cheese.

Baked uncovered at 375°F for about 20 to 25 minutes until bubbling and browned on top, this casserole invites toppings such as lettuce, tomatoes, green onion, and extra sour cream to be added at serving. It combines classic taco ingredients into a hearty, shareable dish, turning familiar flavors into a baked casserole.

  • 1 pound ground beef lean
  • 1 medium onion diced
  • 1 green bell pepper diced
  • cups corn kernels frozen
  • ½ cup water
  • 1 ounce taco seasoning 1 packet, or 2 tablespoons homemade taco seasoning
  • cups salsa
  • 16 ounces refried beans 1 can
  • ½ cup sour cream
  • 12 ounces tortilla chips slightly crushed
  • 3 cups Mexican cheese blend shredded

Instructions

  1. Preheat the oven to 375°F. Grease a deep 9x13-inch baking dish.
  2. Heat a large skillet over medium-high heat. Add the beef and onion, cooking while breaking up with a spoon until no pink remains. Drain any fat.
  3. Add the bell pepper, corn, ½ cup water, and taco seasoning. Stir and let simmer until the water mostly has evaporated, about 4 minutes. Stir in the salsa and remove from the heat.
  4. In a medium bowl, combine refried beans and sour cream.
  5. Place half of the tortilla chips in the bottom of the dish. Spoon half of the beans in tablespoons over the tortilla chips. Top with half of the meat mixture and 1 cup of cheese. Repeat the layers with the remaining tortilla chips, bean mixture, meat mixture, and the remaining 2 cups of cheese.
  6. Bake the casserole uncovered for 20 to 25 minutes or until bubbly and browned.
  7. Add toppings and serve.
