Taco Casserole
Description
The Taco Casserole begins with browning lean ground beef alongside diced onion and optionally jalapeño for heat. After draining excess fat, garlic and a packet of taco seasoning are incorporated with black beans, mild green chiles, tomato paste, and salsa to create a spiced, saucy mixture. Part of the shredded Mexican cheese blend is mixed in before transferring everything to a casserole dish, topped with the remaining cheese.
Baked at 350°F, the casserole becomes hot and bubbly, with the cheese melting into a golden layer. The finished dish offers a combination of soft beans, tender beef, and gooey cheese, with a mildly spicy kick from the jalapeño if used. It serves as a filling entrée suitable for casual dinners.
The casserole can be topped after baking with a variety of accompaniments such as guacamole, lettuce, olives, tomatoes, jalapeños, cilantro, lime wedges, or crunchy Frito chips to add freshness, texture, and brightness. It also freezes well when assembled without the top layer of cheese, and reheats thoroughly after thawing.
Ingredients
- 1 pound ground beef lean
- 1 medium yellow onion diced
- 1 medium jalapeño optional, seeded and finely diced
- 3 cloves garlic minced
- 1 ounce taco seasoning 1 packet
- 15 ounces black beans 1 can, drained and rinsed, canned
- 4 ounces green chiles 1 can, canned, mild
- 3 tablespoons tomato paste
- 16 ounces salsa or picante sauce
- 2 cups Mexican cheese blend divided, shredded
Instructions
- Preheat oven to 350°F degrees.
- Heat a large, deep skillet over medium-high heat. Add ground beef and onion, cooking until no pink remains, about 4-5 minutes. Drain any fat.
- Add garlic and jalapeno (if using). Cook for 1 minute more.
- Stir in taco seasoning, black beans, green chiles, tomato paste and salsa. Cook for 3-4 minutes or until heated through.
- Take off the heat and stir in 1 cup of shredded cheese.
- Transfer the beef mixture to a 9x13-inch baking dish and top with remaining cheese.
- Bake for 25 minutes, or until hot and bubbly and cheese is melted.
- Top with desired toppings and serve.
