Taco Casserole Recipe
Description
Ground beef is browned and mixed with prepared taco seasoning, then spread evenly into a greased baking dish. A batter made from beating eggs, milk, biscuit baking mix, and black pepper is poured over the meat layer. The casserole bakes at 400°F for about 20-25 minutes until the biscuit layer turns golden brown and cooked through. After a brief cooling period, sour cream is spread over the top, followed by chopped lettuce, tomatoes, shredded cheddar cheese, and sliced olives to create a layered texture experience.
Serving warm allows the cheese to melt slightly while maintaining fresh vegetable crunch. The casserole can be prepared ahead and stored in the refrigerator before baking for convenience. It also freezes well once fully baked and cooled, retaining flavors and texture after reheating. Leftovers store for a few days refrigerated and reheat effectively in microwaves or ovens.
This recipe provides a comforting and convenient combination of ground beef taco flavors with a biscuit topping, suitable for casual family dinners or meal prep. The layered fresh toppings contribute to a more balanced dish.

- 2 cups lettuce chopped
- ¾-1 cup tomato chopped
