Taco Casserole with Fritos

This Taco Casserole layers ground beef seasoned with taco spices, green chiles, cream cheese, and enchilada sauce atop crunchy Fritos, all topped with shredded cheese and optional fresh toppings like lettuce and tomato. Baking melds these components into a hot, bubbly dish where creamy and crispy textures balance each bite, making it a hearty option for a casual dinner. It’s especially suited for gatherings or when you want a comforting, flavorful casserole with easy layering and familiar ingredients.

Description

Taco Casserole with Fritos combines seasoned ground beef with green chiles and a creamy mixture of cream cheese and enchilada sauce. This filling is layered over crunchy Fritos and sprinkled with shredded cheese. Baking melts the cheese and softens the ingredients just slightly, allowing the Fritos to maintain some crispness. The resulting casserole contrasts creamy, savory, and crunchy textures in each serving. Optional fresh toppings like shredded lettuce, chopped tomatoes, salsa, and sour cream provide brightness and freshness at the table.

The ground beef is browned with onion and taco seasoning, then enriched with green chiles and melted cream cheese to create a flavorful, creamy base. Layering this over Fritos and cheese before baking helps keep the corn chips from becoming too soggy while melding the flavors together nicely.

Serve the casserole warm with your choice of fresh toppings. It makes a filling dish for casual meals and gatherings. For best texture, the recipe notes advise serving it soon after baking to maintain some crunch from the corn chips, as making it too far in advance causes sogginess.

  • 1/2 large onion finely chopped
  • 2 tablespoons taco seasoning
  • 2 tablespoons green chiles chopped
  • 15 ounces enchilada sauce I recommend Gebhardt brand
  • 2 ounces cream cheese
  • 10.5 ounce fritos bag
  • 8 ounces cheese shredded
  • lettuce Optional Toppings:, shredded lettuce, chopped tomatoes
  • tomato
  • salsa
  • sour cream

Instructions

  1. Preheat the oven to 350°F. Spray a 9x13 casserole dish with nonstick spray and set aside.
  2. Heat a large skillet over medium-high heat. Add the ground beef, onion, and taco seasoning.
  3. Cook, breaking up the ground beef until it is browned and cooked through. Turn the heat down to low.
  4. Add the green chiles, enchilada sauce, and cream cheese to the cooked ground beef mixture and mix to combine. Continue stirring until the cream cheese is melted and everything is mixed well.
  5. To the casserole dish, add half of the Fritos and spread evenly. Top the Fritos with half of the ground beef mixture and spread evenly. Sprinkle with half of the shredded cheese. Repeat the layers with the remaining Fritos, topped with the remaining ground beef mixture, and finish with the remaining shredded cheese.
  6. Bake for 15-20 minutes until it is hot and bubbly.
  7. Remove the casserole from the oven and allow it to cool for about 10 minutes before serving.
  8. Top with your favorite toppings and enjoy!

Notes

  • Ensure the cream cheese is fully melted and mixed evenly for consistent creaminess throughout the casserole.
  • Prepare and serve this casserole just before eating to keep the Fritos crunchy; avoid making it too far in advance to prevent sogginess.
