Ingredients
- ground beef seasoned taco meat

- tortilla chips
- salsa

Homemade Taco Meat
- 1 pound ground beef lean
- 1/2 cup fire roasted tomatoes
- 1/4 cup water
Taco Seasoning Mix
- 1/2 TB chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 TB Mexican spice mix
- 1 teaspoon smoked paprika
- 1 teaspoon oregano Spanish variety
- 1 teaspoon crushed red pepper
Homemade Guacamole
- 3 avocado seed removed and skin removed
- 1/4 cup cilantro chopped, fresh
- 1 jalapeños seeds removed and diced
- 1 TB garlic minced
- 2 TB lime juice
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Layer the shredded purple cabbage in a circle in the middle of a large wooden board.
- Fill small bowls with salsa, guacamole, street corn, pico de gallo, cheese, chopped cilantro, etc. and place the bowls around the edges of the board.
- Prepare the taco meat and scoop on top of the red cabbage in the center of the board.
- Fill in the rest of the space on the board with stacked taco shells, shredded cheese, tomatoes, peppers, and lime wedges. Any additional space can be filled in with tortilla chips.
Homemade Taco Meat
- Whisk together the taco seasoning ingredients in a small bowl.
- Add to a large sauté pan with lean ground beef, fire roasted tomatoes, and water. Cook over medium heat or medium high heat, stirring occasionally, until the meat is cooked through.
Homemade Guacamole
- Add avocado flesh to large bowl and mash with a potato masher until mostly smooth, with a few lumps remaining.
- Add remaining guacamole ingredients and stir to incorporate.
