  • 2 tablespoons olive oil
  • 1 pound ground beef lean
  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 2 teaspoons cumin
  • 1/3 cup beef stock or chicken stock
  • salt to taste
  • black pepper to taste

chipotle sour cream

  • 1 cup sour cream
  • 2 chipotle peppers in adobo
  • 1 lime juiced

assembly

  • 3 ounces cheddar cheese shredded
  • 2 Roma tomato seeded and diced
  • 2/3 cup iceberg lettuce shredded

Instructions

  1. Place a skillet over medium heat and add oil. Add beef and brown, breaking apart with a wooden spoon. Season with salt and pepper.
  2. Add cumin, garlic powder, chili powder, onion powder, and smoked paprika and stir together for 1 minute.
  3. Stir in tomato paste and stock until bee is evenly coated. Lower heat to medium low and simmer for 5 minutes, stirring occasionally. Set aside and slightly cool.

chipotle sour cream

  1. Place sour cream, chipotle peppers and lime juice into a food processor and blend together until smooth.

assembly

  1. Spread chipotle sour cream in a thin layer onto a platter.
  2. Top with an even layer of ground beef mixture.
  3. Top beef with shredded cheese, then half the tomatoes.
  4. Top with shredded lettuce and finally with remaining tomatoes. 
  5. Season with black pepper and serve with tortilla chips.

  • All components can be made up to 2 days in advance and refrigerated separately in airtight containers to maintain freshness.
  • Warm the taco meat gently before assembly by heating in a skillet or microwave to enhance flavor and texture.
