Taco Mac and Cheese Casserole
Description
This casserole starts by browning ground beef with diced onions and seasoning the mixture with chili powder, cumin, and salt. The spiced beef is simmered briefly to develop flavor and thickened slightly. It is then mixed with cooked elbow macaroni, drained black beans, corn, salsa, sour cream, and shredded cheddar cheese. The mixture is placed in a casserole dish and baked covered to meld the flavors and gently heat the ingredients without drying out.
After 30 minutes, the dish is uncovered, topped with additional cheddar cheese, and baked until golden and bubbly. The result is a rich, creamy casserole with a mild smoky, spicy profile from the seasoning blend. The beans and corn add texture and heartiness, balancing the creamy cheese and tender pasta.
This casserole serves well as a main meal for casual dinners and can be paired with simple sides or fresh garnishes depending on preference.
