Description

This salad starts by browning ground beef seasoned with taco seasoning and water, then cooling it. Cooked rotini pasta is combined with the beef and a combination of diced purple onions, shredded cheddar or Mexican blend cheese, sliced black olives, halved cherry tomatoes, corn kernels, and shredded lettuce. Crushed Doritos are added just before serving to maintain their crunch.

  • 1 1/2 lbs ground beef
  • 2 tablespoons taco seasoning
  • 1 purple onion diced
  • 16 oz rotini pasta package
  • 2 cups cheddar cheese or Mexican blend cheese, shredded
  • 2.5 oz black olives drained, canned, sliced
  • 2 cups cherry tomato sliced
  • 1 cup corn kernels
  • 2 cups lettuce shredded
  • 2 cups Doritos crushed
  • 16 oz Catalina dressing

Instructions

  1. Place a non-stick medium skillet over medium-high heat and once hot add the beef and brown it. Cook the beef until no longer pink then drain and discard the grease.
  2. Add the taco seasoning and about 1/4 cup water and cook until reduced, set beef aside to cool.
  3. Meanwhile, cook pasta according to package directions. Run under cold water to cool, drain well and place it into a large bowl.
  4. Add the rest of the ingredients, including the cooled beef, except the Doritos.
  5. When ready to serve add in the crushed doritos and stir, add the dressing and stir until everything is well coated.
  6. Garnish with chopped parsley, drizzle with sour cream, and serve.
