Description
Ground beef is cooked over medium-high heat until no longer pink, then drained and simmered with taco seasoning and water until a thick, flavorful filling develops. This meat is layered with shredded cheese on half of a flour tortilla, folded, and cooked on a greased griddle or skillet until each side is golden brown and the cheese inside melts thoroughly.
Alternatively, assembled quesadillas can be baked in a hot oven with olive oil brushed on each side to crisp the exterior evenly. For quicker preparation, microwave cooking melts the cheese but results in a softer tortilla. The dish is commonly cut into triangles for convenient serving.
These quesadillas offer a versatile meal or snack that balances cheesy richness with spicy seasoned meat, and their portability makes them suitable for casual meals. Serving with classic Mexican condiments like sour cream, guacamole, and salsa enhances the overall dish.
Ingredients
- 1 lb. ground beef
- 1 (1 ounce) taco seasoning such as Old El Paso brand, packet
- ⅔ cup water (or the amount of water called for on your package of taco seasoning)
- 6 (8-inch) flour tortillas (“burrito size”)
- 3 cups cheddar cheese grated, or Mexican-blend cheese
- sour cream optional for serving, diced or sliced

Instructions
- Cook the ground beef in a large skillet over medium-high heat until the meat is no longer pink. Drain off the excess grease and return the meat to the skillet. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and simmer uncovered for 3-4 minutes (stirring often), until the sauce thickens.
- Preheat a flat griddle or a large skillet over medium heat. To prepare one quesadilla: Spread ¼ cup of cheese on half of a tortilla. Sprinkle with about ¼ - ½ cup of the taco meat. Add another layer of cheddar on top of the meat. Fold the tortilla over. Repeat this process with the remaining ingredients to assemble additional quesadillas.
- Grease the griddle or large skillet. Cook the quesadillas over medium heat for 2-3 minutes per side, or until golden brown. Remove to a cutting board and allow the quesadilla to cool for a few minutes. Cut into triangles and serve.
Notes
- For microwaving, assemble the quesadilla and heat on high until cheese melts (about 1 minute).
- To cook multiple quesadillas in the oven, brush each side with olive oil for a crisp texture and bake at 450°F for about 10 minutes.
- Use your preferred brand of taco seasoning and adjust water amount as directed on the seasoning package.
