Description
This recipe begins by rinsing quinoa to remove bitterness, then cooking it in chicken broth with a whole green onion for added fragrance. The quinoa absorbs the broth’s flavor, becoming tender and fluffy. Separately, ground chicken is browned with diced onion then simmered with taco seasoning and water to create a thick, spiced meat topping.
The meals are assembled by discarding the whole cooked onion from the quinoa, dividing the grain among bowls, and layering the seasoned meat atop. Canned corn provides sweetness and texture, complemented by sliced fresh green onion for sharpness.
This bowl accommodates a variety of toppings such as diced tomatoes, bell peppers, olives, shredded cabbage, salsa, sour cream, cheddar cheese, or jalapeños, enabling customization by taste. The combination balances protein and grains with fresh and cooked elements for a filling yet balanced meal.
Ingredients
- 1 ¼ cups quinoa uncooked
- 2 cups chicken broth
- 2 green onions divided, 1 sliced.
- 1 pound ground chicken ,turkey or beef
- ½ onion finely diced
- 2 tablespoons taco seasoning
- 1 cup corn drained, canned; Mexican mix

Instructions
- Rinse quinoa until water is clear. Combine quinoa, broth and one whole green onion in a sauce pan. Bring to a boil, reduce heat and simmer covered 25 minutes.
- Meanwhile, brown ground chicken and onion in pan until no pink remains. Add taco seasoning and ½ cup water. Simmer until thickened.
- Divide quinoa over four bowls (discard whole onion). Top with seasoned chicken, corn, and sliced green onion. Add toppings as desired.
