Taco Salad Recipe

Taco Salad Recipe combines seasoned ground beef cooked with salsa and taco seasoning layered over fresh iceberg or romaine lettuce, topped with a variety of colorful vegetables including tomatoes, jalapeños, black beans, corn, black olives, and red onion. The salad is finished with shredded Mexican cheese, mashed avocado, and sour cream with salsa dressing for a hearty, flavorful dish.

Description

The recipe calls for seasoned ground beef cooked with olive oil, taco seasoning, salsa, and cilantro to build a saucy, well-flavored meat mixture. Meanwhile, a creamy dressing made from sour cream, salsa, and taco seasoning is prepared. Mashed avocado is flavored with lime juice and salt to add richness and freshness.

To assemble, chopped lettuce forms the base, topped with the cooked meat, diced tomatoes, jalapeños, black beans, corn, black olives, diced red onions, and shredded cheese. A scoop of mashed avocado and a dollop of the sour cream dressing complete each serving. Tortilla chips add crunch and are served alongside or on top.

This salad balances savory, spicy, creamy, and fresh elements and can be customized with ingredient substitutions such as ground turkey or pre-washed lettuce to save time. The dish stores well for up to three days, making it a practical choice for leftovers.

Ingredients

Servings
  • 1 oz. taco seasoning see notes for homemade recipe, packet
  • 16 oz. salsa divided
  • 3/4 cup sour cream divided
  • 1 avocado
  • 1/8 teaspoon salt
  • 1 teaspoon lime juice
  • 1 tablespoons olive oil
  • 1 lb. ground beef
  • 3 tablespoons cilantro roughly chopped
  • 1 iceberg lettuce chopped and clean, or romaine lettuce
  • 2 Roma tomato diced
  • 2 jalapeno pepper seeded and diced
  • 1 cup black beans drained and rinsed
  • 1 cup corn drained, whole kernel
  • ¼ cup black olives drained and sliced
  • 1/3 cup red onion diced
  • 1 ½ cups Mexican cheese blend see notes, shredded
  • 4 oz. tortilla chips

Instructions

Prep Work

  1. For the dressing: Combine 1/3 cup sour cream, 1/3 cup salsa, and ½ tablespoon taco seasoning. Set aside.
  2. Slice the avocado in half lengthwise, remove the pit, and scoop the pulp into a small bowl. Add lime juice and 1/8 tsp. salt and use a fork to mash it. Cover tightly with saran wrap and set aside at room temp.

Cook the Meat Mixture

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef, cook and crumble for 7 minutes, or until brown and cooked through. Drain grease.
  2. Reduce heat to low. Add 2 tablespoons taco seasoning and toss to coat. Add the 3/4 cup salsa and cilantro. Add additional salsa if desired. Cover partially while you prepare the salad.

Assemble the Salad

  1. Add the lettuce to serving plates or a large salad bowl. Sprinkle with the meat mixture.
  2. Top with diced tomatoes, peppers, black beans, corn, black olives, onions, and cheese.
  3. Top with mashed avocado then add a dollop of sour cream to each serving.
  4. Drizzle with salad dressing or serve it on the side.
  5. Sprinkle with tortilla chips and serve!

Notes

  • Homemade taco seasoning includes chili powder, cumin, salt, pepper, paprika, garlic powder, onion powder, oregano, and cayenne; can substitute with pre-made packet.
  • Use pre-washed lettuce and prepared guacamole for quicker assembly.
  • If salsa is thick, add water or broth to meat mixture to adjust consistency.
  • Ground turkey can replace beef for a leaner option; Doritos can be substituted for tortilla chips.
  • Store leftovers airtight for up to three days; reheat meat mixture on stove or microwave.
