Tacos Dorados (Taquitos)

Tacos Dorados, also known as Taquitos, are rolled corn tortillas filled with seasoned shredded chicken, lightly fried to a crisp golden finish. The tortillas are briefly fried to soften, then wrapped tightly around the meat mixture and fried again until crisp. The result is a crunchy exterior enclosing savory filling, traditionally garnished with salsa, sour cream, and cheese.

Description

This recipe starts by mixing shredded cooked chicken (or similar poultry) with salsa negra or a smooth hot sauce to evenly coat the meat. Corn tortillas are dipped briefly in hot oil to soften, allowing them to be rolled without cracking. A thin layer of the meat filling is spread on one end of each tortilla, then rolled tightly and secured by frying seam-side down.

The taquitos are fried in hot oil in batches until golden and crisp on all sides. They are then drained on a cooling rack to maintain crunch. Tacos Dorados are typically served garnished with fresh salsa, sour cream, and cotija or shredded cheese, offering a satisfying combination of crisp texture and seasoned filling.

This dish functions well as a snack, appetizer, or part of a meal and is versatile depending on the choice of protein and garnishes.

  • 3 cups chicken or pheasant, turkey, etc
  • 1/2 cup Salsa negra or hot sauce or other smooth sauce
  • 16 corn tortilla 6-inch
  • 1 1/2 cups corn oil or other neutral vegetable oil
  • salsa for garnish
  • sour cream optional, for garnish
  • cotija cheese optional, or shredded cheese, for garnish

Instructions

  1. Mix the shredded meat with the salsa or hot sauce, breaking up any large pieces. You need to roll a delicate tortilla around this, and you want no big lumpy bits. 
  2. Heat the oil in a large frying pan over medium heat for about 4 minutes. Using tongs, dip the tortillas in the hot oil for a few seconds to soften them. Set them in a tray or plate. 
  3. Put a tablespoon or two of the shredded meat in a thin rectangle on the first third of a tortilla. Wrap it up tightly, but gently, as the tortillas are tender at this point. Slide the taquito, seam side down, aside. Repeat with the remaining taquitos. 
  4. Heat the oil to at least 325F, and ideally 350F. Using a thin spatula, slip the end of the spatula under the seam of a taquito and carefully place it in the hot oil, seam side down. Press on the top of the taquito for 10 seconds to hold it. Repeat with a few more taquitos. You will need to do this in batches so you can flip them. 
  5. Set a cooling rack on a baking sheet and put that in the oven, setting the oven to "keep warm." After 1 to 2 minutes, turn your taquitos over and fry them on the other side for another 1 to 2 minutes. Move them to the rack in the oven and repeat with the remaining taquitos. 
  6. Serve with the salsa, cheese, sour cream or whatever makes you happy.
