  • 3 tablespoons lemon juice fresh
  • 2 tablespoons water more as needed, cold
  • 1 to 2 teaspoons pure maple syrup can use honey
  • 1 clove garlic minced
  • salt to taste, kosher salt and freshly ground
  • black pepper to taste, kosher salt and freshly ground

Instructions

  1. In a small bowl, whisk together the tahini paste, lemon juice, water, maple syrup, and garlic. Season with salt and pepper, to taste. If the dressing is a little too thick, you can always add a little more water until desired consistency is reached. Taste and add more lemon or maple syrup, if necessary.

Notes

  • Keep the dressing in a sealed container refrigerated for up to one week to maintain freshness.
  • If the dressing thickens after storage, whisk in a little cold water to loosen it before serving.
  • Adjust lemon juice or maple syrup levels to suit your preferred balance of tanginess and sweetness.
