Tahini Dressing (Plus 4 Flavor Variations)
Description
This versatile Tahini Dressing starts with combining tahini, water, lemon juice, garlic, maple syrup, salt, and optional pepper. Whisking initially causes a curdled appearance that smooths with continued mixing or blending. The dressing can be prepared in a bowl or with a blender for a uniformly creamy texture. The lemon juice provides acidity to cut through the richness of the tahini, while maple syrup adds gentle sweetness. The garlic adds pungency and depth.
Flavor variations extend this base dressing. Smoked paprika adds smokiness; substituting orange juice and zest provides a citrus twist; grated ginger brings warmth; Dijon mustard brightens and adds complexity. The Green Goddess tahini dressing includes non-dairy yogurt, fresh chives, parsley, lemon juice, dulse flakes, and maple syrup, creating a creamy herbaceous version.
The dressings are suitable for salads, bowls, or as dips. They store refrigerated in airtight containers, keeping best for about six days, with some variations lasting about four. Adjust water to reach desired consistency.
