For the dressing

  • cup tahini paste
  • cup lemon juice
  • 2 garlic pressed, cloves
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons water

For the salad

  • 2 cucumber diced, Persian
  • 2 Roma tomato diced
  • ½ red onion diced
  • ¼ green pepper diced
  • ¼ cup parsley chopped, fresh
  • 1 tablespoon mint chopped, fresh

Instructions

  1. Place the tahini paste in a large serving bowl. Add the lemon juice, garlic and salt. Use a whisk or fork to combine the mixture until it forms a paste-like consistency.
  2. Slowly add water to the mixture and continue whisking until it’s smooth and well blended.
  3. Add the cucumbers, tomatoes, red onions, green pepper, parsley and mint on top and toss to combine.

Notes

  • Store dressing and vegetables separately when possible to maintain the salad's crispness.
  • Refrigerate leftovers in an airtight container and consume within 2 to 3 days.
  • Toss the salad before serving to redistribute the dressing and flavors evenly.
