  • 1 1/2 tablespoons shortening
  • 1 pound ground beef
  • 1/4 cup onion chopped
  • 1/2 cup tomato canned
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper or to taste, ground
  • 3/4 teaspoon chili powder

Instructions

  1. In a saucepan, combine the cornmeal, salt, and water. Gradually add the evaporated milk, stirring constantly.
  2. Add the shortening to the mixture and bring to a boil over medium heat, stirring continuously until the mixture thickens (about 5 minutes).
  3. Remove from the heat, cover, and let cool while preparing the filling.
  4. Preheat the oven to 375°F and grease a shallow 9x13-inch baking pan.
  5. In a large skillet over medium heat, sauté the ground beef and onion until the onion softens and the beef is almost browned. Drain any excess fat.
  6. Spread half of the cornmeal mixture evenly in the bottom of the prepared baking pan.
