Tangy Salmon Sheet Pan Dinner
Description
This one-pan meal features salmon fillets centered on a sheet pan flanked by oven-roasted small potatoes and vegetables. The potatoes are tossed with olive oil, thyme, salt, and pepper and baked initially to start softening. After 10 minutes, salmon is placed skin-side down, brushed with olive oil, lime juice, and seasonings. Cherry tomatoes and trimmed asparagus are coated similarly and nestled around.
After an additional 15-17 minutes baking, a sauce made of jam (likely a fruit preserve), soy sauce, fresh lime juice, and cayenne pepper is spooned over the salmon. The pan is then broiled briefly until the sauce is bubbly and slightly caramelized, enhancing tangy and sweet flavor layers. This method ensures the salmon remains moist, potatoes become tender, and vegetables retain slight firmness.
This dish combines protein, starch, and vegetables with bright citrus and spicy notes without requiring multiple pans, making cleanup straightforward. The layered cooking times ensure components finish perfectly together.
