Taquera Salsa

Taquera Salsa is a smooth, smoky salsa made by sautéing tomatoes, onions, garlic, and dried chile de arbol peppers before blending with olive oil and lime juice. The result is a thick sauce with bright acidity and mild heat, ideal as a taco condiment.

Description

This salsa starts by cooking quartered plum tomatoes and diced white onion in olive oil until softened, which mellows their raw sharpness. Dried chile de arbol peppers and smashed garlic are added briefly to infuse the oil with smoky and spicy notes. The cooked vegetables and peppers are then blended with the remaining olive oil, lime juice, and kosher salt until smooth and thick.

The salsa’s texture is smooth yet substantial, suitable for spooning over tacos or other Mexican dishes where a balanced heat and brightness complement grilled or roasted fillings. The lime juice adds freshness, while the olive oil provides richness and melds the flavors.

  • 1/3 cup olive oil
  • 2 plum tomato quartered, medium
  • 1 white onion large diced, medium
  • 3 dried chile de arbol peppers seeded
  • 3 garlic smashed, cloves
  • lime juice of 1
  • 1/2 tsp kosher salt

Instructions

  1. Preheat a large frying pan with 3 tablespoons olive oil over medium heat. Add the tomatoes and onions and cook for 5 minutes, stirring occasionally.
  2. Add the árbol peppers and the smashed garlic to the pan, sautéing for another 2 minutes.
  3. Take the pan off the heat and carefully add the onions, tomatoes, peppers, and garlic into a blender.
  4. Blend all of the salsa ingredients on high speed. While the salsa is still blending, open the small twist top in the middle of the blender top and add the rest of the olive oil. Continue blending until the salsa is smooth and thick.
  5. Taste, and add lime juice and kosher salt as needed. Serve as a condiment to your favorite tacos.

Notes

  • Store in an airtight glass container in the refrigerator for up to 7 days to maintain freshness and avoid staining.
  • Freeze in freezer-safe containers or bags for up to 3 months, then thaw in the refrigerator and stir before serving.
