Taro Rösti

Rösti is a term from the German-speaking part of Switzerland which generally refers to a small potato patty. Taro rösti is is a taro-root patty from Palau.

Ingredients

  • 2 lb taro root (about 1 medium-sized taro root)
  • 1 onion
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground
  • 4 tablespoons neutral cooking oil generic cooking oil

Instructions

  1. Peel the taro and grate into a bowl.
  2. In the same bowl, grate the onion. Add salt and pepper. Mix well.
  3. Form fairly flat patties about 4 to 5 inches (8-10cm) in diameter, squeezing the excess liquid.
  4. Heat pan with oil at medium-high heat.
  5. Fry the rösti about 5 minutes on each side, until golden brown. Place on a plate covered with paper towels.
  6. Repeat until there is no more taro mixture.
  7. Serve hot.
