Ingredients
- 6 English Muffin
- 8 egg large
- 1/4 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup mozzarella cheese shredded
- 1 Tbsp butter Melted
- 6 lices American cheese
- 12 lices Black Forest ham
Instructions
- Preheat the oven to 350 degrees F.
- In a large mix bowl, whisk together the eggs, milk, salt and pepper. Then stir in the shredded mozzarella cheese.
- Spray a 9X9 baking pan with a non-stick spray and pour the egg mixture into the pan.
- Bake for 15-20 minutes until the eggs are cooked through and slightly fluffy. Cut the eggs into 6 equal square pieces.
- Then set the oven to the broil setting. Cut the english muffins into halves and butter the cut sides of the muffins and place facing up on a baking sheet.
- Broil in the oven for 2-4 minutes until the tops are slightly golden brown. Remove from the oven.
- Make the sandwiches by staring with the bottom bun first, then top with the egg, 1 slice of cheese and 2 slices of ham. Top with the top of the english muff and enjoy!
- To Freeze: wrap each sandwich in plastic wrap and place them in a large freezer bag.
- To reheat from frozen: Unwrap the sandwich from the plastic wrap and wrap in a paper towel. Microwave for 3 minutes on high (flipping the sandwich halfway through the cook time).
- To reheat from thawed: Thaw the sandwich out overnight in the refrigerator. Remove from the plastic wrap and wrap in a pepper towel. Microwave for 1 minute on high or until heated through.
